This Single Origin Coffee is brought to you by farmer Javier Martinez. Javier’s farm is in Pena Roja, near Huehuetenango, with elevations exceeding 1780 meters. Javier meticulously oversees both his farm, along with his mother (Portifira)’s farm, which expands over 24 hectares. Javier de-pulps the cherries the day they are picked and leaves them to ferment in a concrete tank for 24 hours. He briefly washes the cherries 12 hours later and adds clean water to the tank. This method removes the sugary mucilage that has detached from the cherries that ferment faster, which allows for a full fermentation of all cherries in the batch.
